Cooking: My New Passion



Ingredients

1 stick of butter
fresh sage
lime
1 fresh orange for the juice
orange zest
chicken broth
4 pieces of chicken

Make sure butter is room temperature, separate the sage and cut the lime into for equal pieces. Mix the butter, sage, lime, and orange juice in a food processor and let sit. (This can be done days in advance or the same day, if done in advance make sure it is at room temp before you apply to chicken.) Use fresh chicken, or if frozen make sure it is thawed in the refrigerator on 40° the night before. Place 2 cups of chicken broth on the stove under a medium heat until boiling and remove. Place chicken in a separate dish and mix all ingredients until the chicken is completely submerged. Let marinate for a minimum of 6 hours, for more flavorful chicken marinate over night.

Preheat oven to 350° and when chicken is marinated place on a small baking dish and back for 35 minutes, after about 35 minutes increase the temperature to 450° and let cook for 15 minutes, after 15 minutes lower the temperature to 300° for 10 minutes and remove. Make sure the internal temperature of chicken is at 165° for completely cooked chicken.
